TERIYAKI CHICKEN


Chicken dressed with TERIYAKI sauce is perfectly fit to Japanese rice!

TERIYAKI is taste of sweet and salty with soysauce.
Many foreigners, even people who are not familiar with asian food, seem to like TERIYAKI taste.
We Japanese also cook adult yellowtail, BURI in Japanese, as TERIYAKI in spite of chicken.


INGREDIENTS -serves 2 persons-

chicken leg

300g

soysauce

30cc

MIRIN

30cc

SAKE or white wine

30cc

ginger

half teaspoon

sugar

1 teaspoon



PREPARATIONS

1. Precook

Cut chicken flat. Mix soysauce, MIRIN, SAKE, sugar and grated ginger in a cup.

2. Grill the skin side of chicken

Put a little oil in a pan and warm. Then put chickin in the pan and grill until its skin gets golden.

3. Turn chicken over

Turn chicken over and grill the other side.

4. Remove excess oil

Plenty of oil comes from chicken skin. Remove excess oil with paper.

5. Add TERIYAKI sauce

Add TERIYAKI sauce in the pan.

6. Dress chicken with TERIYAKI sauce

Dress both side of chicken with TERIYAKI sauce well.

7. Put on dish

Put chicken and sauce on dish.



TIP

Take time to crisp chicken skin first.
It make excess oil out of chicken and add good flavor and texture.
